Pastel de mousse de fresa sin hornear

¡Hice un pastel de mousse de queso crema y fresas sin horno relleno de fresas y lleno de sabor a fresa!

Hice puré de fresa y lo usé para gelatina, mousse y adornos, así que creo que resultó ser un pastel de fresa y fresa~

Ingredients

  • 350 g de fresa
  • 120 g de azúcar
  • 5 g de jugo de limón
  • 100 g de puré de fresa
  • 30 g de leche tibia
  • 2g hoja de gelatina
  • 80 g de galleta Lotus Biscoff
  • 20g de nueces
  • 40 g de mantequilla sin sal derretida

  • 150 g de queso crema
  • 60 g de yogur natural
  • 1/2 cucharadita de extracto de vainilla
  • 150 g de puré de fresa
  • 5g de hoja de gelatina
  • 80 g de nata montada (batida al 50~60%)

Instructions

  1. Poner en una olla las fresas y el azúcar cortado en cubitos y hervir a fuego lento. Cuando espese un poco, agregue el jugo de limón y deje hervir. Alejar del calor.
  2. Agrega la leche tibia al puré de fresa tibio, mezcla, agrega la gelatina remojada en agua fría durante al menos 10 minutos, mezcla, vierte en un molde de 12 cm y endurece en el refrigerador por 30 minutos.
  3. Mezclar galletas de loto trituradas, nueces picadas y mantequilla derretida sin sal, esparcirla en el fondo de un molde de 15 cm y meter en el frigorífico.
  4. Suaviza el queso crema, agrega el yogur natural, el extracto de vainilla y el puré de fresa enfriado y mezcla.
  5. Quitar la humedad de la gelatina remojada en agua fría por más de 10 minutos, derretirla en el microondas por unos 10 segundos, agregarla a la mousse, mezclar, luego agregar 50-60% de nata montada y mezclar.
  6. Echar un poco de mousse en el molde, dejar endurecer en el frigorífico unos 15 minutos, poner encima la gelatina, añadir todo el resto de la mousse y dejar endurecer en el frigorífico unas 3 horas.
  7. Adorne con el resto del puré de fresa, las fresas cortadas y la manzana con menta.
