Pastel De Ganache De Arándanos

El pastel de ganache de arándanos ( pastel de chocolate ) está en el menú de Cooking Tree, ¡y te vamos a enseñar a hacer esta deliciosa receta desde cero!

Hice un pastel de ganache de arándanos con arándanos frescos y chocolate para darle una sensación de lujo~
La crema de arándanos morados y el chocolate combinan bien con el color y el sabor tan bien juntos que es delicioso~^^

Para el puré de arándanos utilicé el que hice la última vez porque quedaban muchos arándanos frescos~

Para el puré, mezclar los arándanos y el azúcar en proporción 3:1 (ajustar el azúcar según el contenido de azúcar de los arándanos) en una olla y llevar a ebullición.

La crema ganache se endurece bien incluso a temperatura ambiente, por lo que es fácil darle forma si se trabaja rápido.
Lo decoré con arándanos y flores moradas en la parte superior, y parece del mismo color que los arándanos, así que combina bien con él~*^^*

Ingredients

  • Hoja de bizcocho de chocolate
  • 140 g de huevo
  • 100 g de azúcar
  • 10 g de jarabe de almidón
  • 2 g de extracto de vainilla
  • 85 g de harina para repostería
  • 10 g de cacao en polvo
  • 25 g de mantequilla sin sal derretida
  • 40g de leche
  • 240 g de chocolate negro
  • 120 g de nata para montar
  • 30 g de mantequilla sin sal
  • 150 g de nata para montar
  • 100 g de puré de arándanos
  • Jarabe de azucar
  • Arándano

Instructions

  1. Ponga el huevo, el azúcar y el almíbar de almidón en una olla con agua caliente y suba la temperatura a 40 grados mientras revuelve.
    Agregue el extracto de vainilla y bata con una batidora de mano hasta obtener una rica espuma de color marfil.
  2. Tamizar la harina blanda y el cacao en polvo y mezclar, luego añadir un poco de masa a la mantequilla derretida y la leche (50-60 grados) y mezclar.
  3. Poner la masa mezclada en la masa principal, mezclar, verter en un molde de 15 cm, batir el fondo para eliminar las burbujas de aire, hornear en un horno precalentado a 180 grados durante 35 minutos, luego enfriar, cortar la parte superior y cortar en 3 piezas.
  4. Derrita el chocolate amargo y la crema batida en el microondas durante unos 60 segundos, luego agregue la mantequilla sin sal, mezcle y enfríe a temperatura ambiente.
  5. Batir la crema batida hasta aproximadamente el 40%, luego agregar el puré de arándanos y batir hasta que se formen cuernos.
  6. Poner una hoja en el plato giratorio, espolvorear con almíbar de azúcar y luego poner encima crema de arándanos y otra hoja. Repita una vez más.
  7. Remueve bien la ganache enfriada y extiéndela por todo el bizcocho.
  8. Aplicar una vez más y usar una cuchara para darle forma a los lados y a la parte superior.
  9. Adorne con el ganache restante, los arándanos, la menta y las flores.
