Ingredients

  • 15cm Hoja de bizcocho de café (3 hojas) (Ventilador de horno el tamaño es de 18 cm)
  • 4 Yema de huevo
  • 40g Mantequilla derretida
  • 50g de leche tibia + 6g de café instantáneo en polvo
  • 1ts de extracto de vainilla
  • Merengue (4 claras de huevo + 80g de azúcar)
  • 110g de harina de repostería
  • 1/2 tz de levadura en polvo
  • Ganache (50g chocolate + 25g nata fresca)
  • Crema de café (400g nata fresca + 40g azúcar + café líquido (4g café instantáneo + 10g nata fresca caliente))
  • Líquido de café decorativo (2g de café instantáneo + 5g de nata fresca caliente)
  • Grano de café, Grano de café en polvo

Instructions

  1. Coloque la hoja de café en la placa giratoria, aplique ganache y cubra con crema de café.
  2. Colocar otra lámina encima de la nata. Repita una vez más.
  3. Después de aplicar la crema en la parte superior y los lados, aplique líquido de café en el costado y use un raspador para crear una gradación.
  4. Pegar los frijoles debajo del pastel.
  5. Exprimir crema en el borde superior y espolvorear café en polvo en el medio para decorar.
