Pudín De Leche Y Caramelo

El pudín de leche y caramelo está en el menú de Cooking Tree, ¡y te vamos a enseñar cómo hacer esta deliciosa receta desde cero!

Hice un pudín de caramelo suave y masticable sin horno ~
No lo horneé en el horno, sino que le puse gelatina para endurecerlo.

El pudín que se prepara calentando tiene una textura ligeramente blanda, como un huevo al vapor, mientras que el pudín endurecido es masticable y se derrite suavemente.

En cuanto a la textura, creo que el pudín endurecido con gelatina es mejor y más sencillo.
Hice el almíbar un poco más espeso usando azúcar moreno e intenté endurecerlo en recipientes de varias formas, pero la forma salió mejor de lo que esperaba ~

Si quieres mantener un poco mejor la forma, puedes añadir unos 2g de gelatina.

Ingredients

  • 100 g de azúcar moreno oscuro
  • 100 g de agua
  • 4 yemas de huevo
  • 60 g de azúcar
  • 5 g de extracto de vainilla
  • 600 g de leche caliente (80 ℃)
  • 10g de hoja de gelatina

Instructions

  1. Poner en una olla el azúcar moreno y el agua y hervir hasta que espese un poco. Ponlo en un recipiente y mételo en el frigorífico.
  2. Agregue el azúcar y el extracto de vainilla a la yema de huevo y mezcle, luego agregue la leche caliente y mezcle.
  3. Exprima el agua de la gelatina remojada en agua fría durante unos 10 minutos, mezcle y tamice por un colador.
  4. Vierta en un recipiente, tape y endurezca en el frigorífico durante al menos 3 horas.
