Cooking Tree le ofrece una receta deliciosa de pan de leche Tangzhong y le mostraremos cómo prepararlo desde cero.

Hice un pan de leche más húmedo y masticable agregando Tangjong.
El tanjong se elabora mezclando agua y harina en una proporción de 5:1 y friéndolo en una sartén para que fermente durante más de 12 horas.

Lo usé después de sacarlo a temperatura ambiente durante 1 a 2 horas antes de amasarlo.
Como no se añaden huevos, el color es más blanco y el sabor más suave.

Yo lo amasé con una panificadora, pero amasando a mano puedes amasarlo durante unos 15 minutos hasta que quede suave.
Creo que este pan sabe muy bien cuando se hornea y se come inmediatamente mientras está caliente.

Ingredients

  • 125 g de agua
  • 25 g de harina de pan
  • 300 g de harina de pan
  • 40 g de azúcar
  • 5 g de sal
  • 6 g de levadura seca
  • 150 g de leche tibia
  • 30 g de mantequilla sin sal derretida

Instructions

  1. Poner en una cacerola agua y harina fuerte, ponerla a fuego medio y hervir hasta que espese, luego ponerla en otro bol, taparla con film transparente y meter en el frigorífico al menos 12 horas.
  2. Coloque harina fuerte, azúcar, sal y levadura seca en una máquina para hacer pan y mezcle, luego agregue el tangjong, la leche tibia y la mantequilla sin sal derretida a temperatura ambiente durante aproximadamente 1 hora antes de usarlo, y amase durante aproximadamente 15 minutos.
  3. Coloque la masa en una bola redonda, cubra con film transparente y fermente durante unos 40 minutos hasta que duplique su tamaño.
  4. Escurrir el gas de la masa fermentada, dividirla en 3 partes, hacer un círculo, cubrir con film transparente y dejar reposar unos 10 minutos.
  5. Estirar la masa, darle forma, ponerla en un molde, cubrirla con film transparente y dejar fermentar unos 30 minutos.
  6. Cubrir la parte superior con leche y hornear en un horno precalentado a 170 grados durante unos 30 minutos.
