INGREDIENTES:

  • 80 g de queso crema
  • 100 g de harina de arroz glutinoso
  • 7 g de cacao en polvo
  • 60 g de azúcar
  • 0,5 g de sal
  • 150 g de agua caliente
  • 35g de leche
  • 15 g de aceite vegetal
  • 2 g de extracto de vainilla
  • 30 g de harina para repostería
  • 7 g de cacao en polvo
  • 135 g de claras de huevo
  • 45 g de azúcar
  • 60 g de chocolate negro
  • 30 g de nata para montar

INSTRUCCIÓN

  1. Pon el queso crema sobre papel pergamino, enróllalo y congélalo en el congelador.
  2. Tamizar el cacao en polvo en la harina de arroz glutinoso, agregar el azúcar y la sal, mezclar, luego agregar agua caliente y mezclar.
  3. Cubrir con film transparente y calentar en el microondas durante 1 minuto y 30 segundos aproximadamente, mezclar con una espátula, tapar nuevamente y calentar en el microondas durante 1 minuto y 30 segundos, amasar hasta que esté suave y frío.
  4. Espolvoree maicena sobre el pastel de arroz glutinoso enfriado y extiéndalo, córtele los bordes, ponga queso crema congelado encima, enróllelo, envuélvalo en papel pergamino y póngalo en el congelador.
  5. Agregue aceite vegetal a la leche y mezcle, agregue el extracto de vainilla y mezcle, luego tamice la harina blanda y el cacao en polvo y mezcle.
  6. Cuando aparezcan burbujas grandes mientras se baten las claras, dividir el azúcar en 2-3 tandas y montar para hacer un merengue con cuernos.
  7. Dividir el merengue en la masa en 3 tandas, mezclar, poner en un molde cuadrado de 22,5 cm, aplanarlo, quitarle las burbujas de aire, hornear en horno precalentado a 170 grados durante 15 minutos y enfriar.
  8. Cocine en el microondas el chocolate amargo y la crema batida durante unos 20 segundos, mezcle, enfríe un poco y aplíquelo sobre la hoja enfriada.
  9. Poner encima el bizcocho de arroz glutinoso congelado, enrollarlo y envolverlo en papel pergamino y luego endurecerlo en el frigorífico durante 1 hora aproximadamente.
