En Cooking Tree, estamos sirviendo un delicioso pastel de chocolate con té con leche y te mostraremos cómo hacerlo desde cero.

Hice un pastel de chocolate fragante con té con leche y Earl Grey en polvo ~
La crema pastelera hecha con té con leche y la hoja del pastel desprenden un sutil aroma a té negro, dejando la boca limpia después de comerlo sin sensación grasosa ~^^

A la hora de hacer nata montada de chocolate, puedes hacer una crema de chocolate fina tamizando el cacao en polvo y batiendo a baja velocidad mientras mezclas con una espátula.

Usé ganache hecha de chocolate amargo, pero si quieres un sabor suave, creo que sería mejor usar chocolate con leche~~

Ingredients

  • 140 g de huevo
  • 100 g de azúcar
  • 10 g de jarabe de almidón
  • 2 g de extracto de vainilla
  • 90 g de harina para repostería
  • 3g de cacao en polvo
  • 2 g de polvo Earl Grey
  • 25 g de mantequilla sin sal derretida
  • 40 g de té con leche
  • 1 yema de huevo
  • 15 g de azúcar
  • 7 g de maicena
  • 100 g de té con leche caliente
  • 350 g de nata para montar
  • 35 g de azúcar
  • 35 g de cacao en polvo
  • Jarabe de azucar

Ganache:

  • 50 gramos de chocolate
  • 25 g de nata para montar

Instructions

  1. Ponga el huevo, el azúcar y el almíbar de almidón en una olla con agua caliente y suba la temperatura a 40 grados mientras revuelve.
    Agregue el extracto de vainilla y bata con una batidora de mano hasta obtener una rica espuma de color marfil.
  2. Tamice la harina blanda, el cacao en polvo y el Earl Grey en polvo y mezcle, luego agregue un poco de la masa a la mantequilla sin sal derretida y al té con leche (50 ~ 60 grados) y mezcle.
  3. Poner la masa mezclada en la masa principal, mezclar, verter en un molde de 15 cm, batir el fondo para eliminar las burbujas de aire, hornear en un horno precalentado a 180 grados durante 35 minutos, luego enfriar, cortar la parte superior y cortar en 3. piezas.
  4. Mezclar en una olla la yema de huevo, el azúcar y la maicena. Agrega el té con leche caliente poco a poco para mezclar. Calentarlo a fuego lento hasta que espese, luego meterlo en una manga pastelera y dejar enfriar.
  5. Agrega azúcar a la nata montada y bátela hasta un 40%, luego tamiza el cacao en polvo, mezcla ligeramente con una espátula y bate a velocidad baja hasta que quede duro.
  6. Coloque 1 bandeja de pastel en la tabla giratoria, espolvoree almíbar de azúcar, crema pastelera de té con leche, crema de chocolate y coloque otra bandeja encima. Repita una vez más.
  7. Aplicar crema por encima y por los lados, hacer un patrón en el lateral con una espátula, aplanar la parte superior y decorar con nata y ganache.
