INGREDIENTES:

  • 5 huevos
  • 125 g de azúcar
  • 15g de miel
  • 5 g de extracto de vainilla
  • 40 g de mantequilla sin sal
  • 65 g de leche
  • 150 g de harina para repostería
  • 400 g de mantequilla sin sal
  • 250 g de azúcar en polvo
  • 5 g de extracto de vainilla
  • 50 g de nata espesa

INSTRUCCIÓN

  1. Coloque un tazón de huevos en una olla con agua caliente, agregue azúcar, miel y extracto de vainilla y revuelva hasta que la temperatura alcance los 40 grados.
  2. Batir con una batidora de mano hasta obtener una rica espuma de color marfil, luego tamizar la harina suave y mezclar.
  3. Vierta un poco de la masa en el bol de mantequilla derretida sin sal y leche (temperatura 50-60 grados), mezcle, ponga la masa principal, mezcle, vierta en dos moldes de 15 cm y elimine las burbujas de aire.
  4. Hornear en horno precalentado a 170 grados durante 30 minutos, enfriar, cortar la parte superior e inferior, cortar en 3 trozos y cortar según tamaño.
  5. Ablande la mantequilla sin sal, agregue el azúcar en polvo y bata lo suficiente durante unos 5 minutos hasta que se vuelva rica y blanca, luego agregue la crema batida y el extracto de vainilla y bata.
  6. Poner la hoja más grande en la rueda, espolvorear con almíbar y nata, luego poner la otra hoja encima.
  7. Repita por tamaño, glaseando la superficie suavemente y luego endurezca en el congelador durante unos 30 minutos.
  8. Poner un poco de la nata restante en otro bol, añadir 1g de cacao en polvo a mucha nata y mezclar para colorear. Añadimos 2g de cacao en polvo y colorante alimentario morado a la nata para darle color.
  9. Ponga la crema de color en una manga pastelera provista de una punta moldeada, exprímala en el exterior del pastel para decorar y luego déjela endurecer en el congelador durante unos 30 minutos.
