En Cooking Tree, el pastel de tiramisú está en el menú y te mostraremos cómo hacerlo desde cero.

Hice un pastel de tiramisú cubriendo una hoja de pastel llena de sabor a café con crema de queso mascarpone ~

En la hoja, simplemente derretí café instantáneo en polvo en leche, lo puse en la masa y lo horneé.

Hice una crema sencilla con queso mascarpone y nata fresca y hice un sándwich. Es suave y sabroso, por lo que está realmente delicioso~

Todo el exterior está cubierto con ganache, pero creo que da una sensación de limpieza y lujo. La ganache se puede hacer sin gelatina, pero si le añades gelatina quedará mucho más brillante y endurecida, por lo que podrás mantener su forma.

Creo que puedes disfrutar de un pastel de tiramisú más rico comiendo la hoja y la nata con la ganache~*^^*

Ingredients

  • 190 g de huevo
  • 110 g de azúcar
  • 10g de miel
  • 3g de extracto de vainilla
  • 35 g de mantequilla sin sal
  • 45g de leche
  • 5 g de café instantáneo en polvo
  • 120 g de harina para repostería
  • 250 g de queso mascarpone frío
  • 50 g de azúcar
  • 250 g de nata para montar
  • 200 g de chocolate negro
  • 150 g de nata para montar
  • 4g hoja de gelatina

Instructions

  1. Coloque un tazón de huevos en una olla con agua caliente, agregue azúcar, miel y extracto de vainilla y revuelva hasta que la temperatura alcance los 40 grados.
  2. Batir con una batidora de mano hasta obtener una rica espuma de color marfil. Tamizar la harina blanda y mezclar.
  3. En un bol de mantequilla derretida sin sal, leche y café instantáneo mezclados (temperatura 50-60 grados), agregue un poco de la masa, mezcle, ponga la masa principal, mezcle, vierta en un molde de 16 cm y elimine las burbujas de aire. .
  4. Hornear en horno precalentado a 170 grados durante 45 minutos, enfriar, cortar la parte superior y cortar en 5 trozos.
  5. Agrega azúcar al queso mascarpone frío y afloja con cuidado. Agrega la nata fresca y bátela para hacer nata.
  6. Coloque 1 hoja en el plato giratorio, aplique crema y coloque otra hoja encima. Repetir 3 veces más, batir los lados y cubrir con nata y meter en el frigorífico.
  7. Vierta nata fresca en el chocolate amargo y derrítalo en el microondas durante aproximadamente 1 minuto. Exprima el agua de la gelatina remojada, mezcle y enfríe a 32 ~ 34 grados.
  8. Verter (7) sobre el bizcocho para cubrirlo y endurecerlo en el frigorífico durante 1 hora.
