Lleno de chocolate ~ ¡Hice un pastel de ganache lleno de fresas!

También puse fresas crudas en un bol y lo decoré exprimiendo la ganache en un círculo, y los colores combinan bien y creo que desprende un ambiente navideño cuando lo preparo~*^^*

Corté la fresa por la mitad y agregué crema batida para mantenerla húmeda, pero era más suave que el chocolate solo. La
ganache se puede usar derritiendo chocolate y crema batida, luego agregando mantequilla y enfriándola hasta obtener la consistencia deseada.

Se agregan fresas al pastel de chocolate amargo, por lo que es fresco y dulce, por lo que es aún más delicioso.

Ingredients

  • 40 g de mantequilla sin sal derretida + 48 g de leche
  • 10 g de cacao en polvo
  • Merengue (4 claras de huevo + 80g de azúcar)
  • 4 yema de huevo
  • 1/2 cucharadita de extracto de vainilla
  • 100 g de harina para repostería
  • 1/2 cucharadita de polvo para hornear
  • Ganache (300 g de chocolate negro + 150 g de nata para montar + 40 g de mantequilla sin sal)
  • Nata montada (120 g de nata para montar + 12 g de azúcar)
  • Jarabe de azucar
  • Fresa

Instructions

  1. Agregue el cacao en polvo a la mantequilla sin sal derretida y la leche y mezcle.
  2. Agrega la yema de huevo y el extracto de vainilla al merengue y mezcla, luego tamiza la harina blanda y la levadura en polvo y mezcla.
  3. Agrega un poco de la masa a (1) y mezcla, luego agrega a toda la masa y mezcla.
  4. Verter en un molde, quitar las burbujas de aire, hornear en horno precalentado a 180 grados durante 35 minutos, enfriar, cortar la hoja en 3 capas y cortar en moldes de 15 cm.
  5. Coloque la hoja en un plato giratorio, espolvoree con almíbar de azúcar y aplique ganache.
  6. Pon las fresas y aplica la nata montada. Repita una vez más.
  7. Aplicar ganache por encima y por los lados y dejar endurecer en el frigorífico durante 10 minutos.
  8. Aplica ganache una vez más en la parte superior y los lados para que quede suave y coloca la fresa entera encima.
  9. Exprime la ganache endurecida en el medio de la fresa y espolvorea con menta de manzana y azúcar en polvo para terminar.
