En Cooking Tree, serviremos una deliciosa Peach Daquoise y te mostraremos cómo prepararla desde cero.

Hice dacquoise de melocotón con una textura agradable añadiendo trozos grandes de melocotones bonitos~

Utilicé duraznos duros hirviéndolos en oligosacáridos y la textura no es tan suave como la de la comida enlatada normal, sino crujiente y masticable, por lo que es realmente deliciosa ~

Horneé la dacquoise en círculo para que coincidiera con el tamaño del melocotón y la lijé con crema de queso crema.
El color es bonito y da una sensación encantadora~

Los melocotones adquieren un bonito color cuando se hierven junto con la piel.

Después de hervir con la cáscara, quítale la cáscara mientras esté ligeramente caliente y déjala enfriar para usarla. Cuando das un bocado, se te llena la boca y podrás disfrutar de su sabor fragante y sabroso.

Ingredients

  • 1 melocotón
  • 200 g de agua
  • 70 g de jarabe de almidón
  • 6 g de jugo de limón
  • 90 g de clara de huevo
  • 40 g de azúcar
  • 3g de extracto de vainilla
  • 65 g de almendra en polvo
  • 50 g de azúcar en polvo
  • 15 g de harina para repostería
  • 70 g de nata espesa
  • 15 g de azúcar
  • 100 g de queso crema

Instructions

  1. Poner en una olla los duraznos cortados, el agua y los oligosacáridos y hervir (unos 15 minutos). Cuando los duraznos se ablanden, agregue el jugo de limón y hierva por otros 5 minutos, luego transfiéralo a otro tazón.
  2. Pelar los melocotones y enfriarlos.
  3. Montar las claras y cuando aparezcan burbujas grandes añadir el azúcar y el extracto de vainilla y montarlas hasta formar un merengue con cuernos.
  4. Tamice las almendras en polvo, el azúcar en polvo y la harina blanda, mezcle y transfiera a una manga pastelera.
  5. Coloque en la fuente del horno, espolvoree con azúcar glass, hornee en un horno precalentado a 170 grados durante 15 minutos y deje enfriar.
  6. Agregue azúcar a la crema batida fría y bata, luego agregue el queso crema frío y bata para hacer crema.
  7. Exprimir la nata sobre la dacquoise enfriada, ponerle melocotones, exprimir la nata y cubrir con otra dacquoise para completar.
