Receta de pastel dacquoise

Horneé una dacquoise grande y la cubrí con crema para hacer un pastel de dacquoise en tonos pastel ~

La crema de mantequilla mezclada con dacquoise dulce y masticable y crema pastelera es deliciosa~~^^

Creo que la crema hay que batirla con mantequilla para darle un sabor rico sin que quede grasosa~~

Lo horneé a baja temperatura para que el color tostado de la dacquoise fuera un poco más brillante ~

Si agregas demasiado pigmento, el color saldrá más oscuro a medida que se hornea, así que creo que debes aclarar el color de lo que crees. Me encanta que es fácil y sencillo de hacer sin glaseado.

INGREDIENTES:

  • 250 g de clara de huevo
  • 80 g de azúcar
  • 3g de extracto de vainilla
  • 140 g de almendra en polvo
  • 140 g de azúcar en polvo
  • 10 g de harina para repostería
  • 3 yemas de huevo
  • 60 g de azúcar
  • 20 g de almidón de maíz
  • 300 g de leche caliente
  • 1/8 cucharadita de pasta de vainilla
  • 150 g de mantequilla sin sal

INSTRUCCIÓN

  1. Montar la clara de huevo y cuando aparezca una burbuja grande dividir el azúcar y batir, luego agregar el extracto de vainilla y batir hasta formar un merengue.
  2. Tamizar las almendras en polvo, el azúcar glass y la harina blanda y dividir la masa mezclada en 4 trozos.
  3. Agregue colorante alimentario a cada masa, mezcle y coloree, y colóquela en una manga pastelera.
  4. Coloque en un molde para horno en círculo, espolvoree con azúcar en polvo dos veces y hornee en un horno precalentado a 160 grados durante 16 a 17 minutos.
  5. Mezcle la yema de huevo, el azúcar y la maicena, vierta la leche caliente poco a poco para mezclar, luego agregue la pasta de vainilla y mezcle.
  6. Caliente hasta que espese mientras revuelve a fuego lento, luego transfiera a otro tazón, cubra con film transparente y enfríe en el refrigerador.
  7. Agregue mantequilla sin sal que se haya ablandado a temperatura ambiente a la crema pastelera enfriada y mezcle para hacer la crema.
  8. Repetir la lámina y la nata para hacer un bizcocho.
